This berry dessert could not be an easier! Pour some frozen berries into a glass dish, mash up some butter in a gluten-free flour mixture, pour over top and bake! Easily one of my go-to quick desserts that is sure to hit the spot! Pro tip: I like it even better cold :)
Ingredients:
1 -12 oz bag frozen mixed berries
1 - 16 oz bag frozen cherries
*can sub other berry combos if you want, or even use fresh berries if you have them
For the crumble:
6 Tbsp Cassava flour
3 Tbsp coconut flour
6 Tbsp cold butter
1 tsp cinnamon
pinch salt
1 Tbsp water
Directions:
Pour berries into a 9X9 in glass casserole dish. In mixing bowl, combine flours, salt and cinnamon, mix. Add butter to bowl and cut into flour with fork or pastry cutter until crumbly. Then, add the water to the mixture and stir until you get larger chunks. Pour over berries and bake at 375 degrees for 45 minutes or until slightly golden brown. Enjoy by itself or with vanilla icecream (homemade coconut milk FTW here!).
