Sweet Italian Chicken Sausage Skillet (Low-carb)

I like to keep some quick-cooking proteins around for when lunch or dinner needs to be made in a pinch. This skillet recipe uses Sweet Italian Chicken sausage that is pre-cooked so you just need to throw it in a skillet with some veggies and call it good! I used the Organic Sweet Italian Chicken Sausage from Trader Joe’s (in the section by the bacon) in this recipe — there’s 5 sausages in a package.

Ingredients:

1 package of Organic Sweet Italian Chicken Sausage (found at Trader Joe’s), sliced into coins

2 bell peppers, sliced

8 oz package of Cremini mushrooms, sliced

1 bag frozen cauliflower (can also rice your own cauliflower if you can’t find in the store; sometimes you can find fresh in the salad section too)

Few handfuls of kale

Olive or avocado oil

Salt & Pepper

2 tsp dried oregano

2 tsp dried basil


Directions:

In a large skillet, heat oil in pan and add sliced peppers and mushrooms; salt and pepper to taste. Cook until peppers and mushrooms are starting to get tender, then add sliced sausage, cauliflower rice, basil, oregano and a little more salt and pepper (to taste); cover skillet, stirring every few minutes. Once the sausage is heated through, add kale and cover until kale is wilted. Stir everything together and serve! I like to add some avocado on top. Enjoy!!
