I love making simple meals taste delicious (and super easy to make). Everyone needs a good roasted chicken recipe that is easy and can be used when you can get a deal on bone-in chicken ;) I used chicken quarters here (thigh with leg) but, you can use any bone-in chicken that you have on hand.
Ingredients:
Bone-in Chicken
Salt & Pepper
Garlic powder
Coconut Aminos (or Tamari if you can tolerate soy)
Sheet pan + parchment paper (for easier clean-up)
Directions:
Using a sheet pan with edges, or jelly roll pan, apply parchment paper (optional), and add chicken to sheet pan. Salt, pepper and garlic both sides liberally and leave skin-side up. Shake coconut aminos over the top of each piece of chicken, trying to coat the surface pretty well. Bake at 425 degrees for 45 minutes or until the chicken reaches temperature. I made roasted carrots and fennel and a quickie side salad to serve alongside the chicken. Enjoy!
